If you had to describe the perfect coffee in one word, what would it be?
For me — harmony. And if I had to name a country that captures that harmony in every bean — without hesitation, I’d say: Colombia.

This is not just one of many coffee-producing countries.
It’s the heart of coffee culture, where every cup carries the story of volcanic soil, mountain slopes, and family-run farms.
And today, I’ll take you there — with the help of the beans we freshly roast in our roastery in Gdańsk.

🌱 Colombia – a country that smells like coffee

There’s a reason why Colombia is as closely associated with coffee as Italy is with espresso. It’s the world’s third-largest coffee producer — but when it comes to flavor that’s recognizable, balanced, and full-bodied, Colombia comes first.

So why Colombia?
It’s the perfect combination of altitude (1400–2000 meters above sea level), fertile volcanic soil, equatorial climate, and ideal humidity. Add to that thousands of smallholder farmers, who don’t see coffee as just a crop — but as part of their family heritage.

You won’t find industrial farms in Colombia — every sack of beans tells a story, and every coffee has the face of a real grower behind it.

🌍 Tolima – an underrated region with remarkable taste

Colombia is famous for coffee, but not every bean comes from Medellín, Huila, or Antioquia.
Tolima is a lesser-known region, tucked away from the main coffee routes — and precisely because of that, it feels more authentic.

Mountains, lush rainforests, volcanic soil, and small farms at 1500–1900 meters above sea level create the perfect conditions for complex, elegant arabica.

And that’s exactly where our Colombia Tolima comes from — a coffee washed processed to preserve its clarity and vivid flavor profile.

What can you expect in the cup?

The 100% Arabica beans from Tolima offer a unique, approachable profile.
They don’t overwhelm, don’t shock the palate — they’re full-bodied, smooth, and harmonious. But definitely not boring!

Here’s what you’ll find in each cup:

  • Caramel and milk chocolate – the main line of sweetness, pleasant and silky,

  • Red apple – fruity brightness and a gentle acidity that lifts the cup,

  • Hazelnut and a hint of spice in the finish – something that lingers long after the last sip.

This is a coffee that delights both newcomers and those who’ve already sipped their way through a few thousand cups.

🛠️ How to brew Tolima?

Colombia Tolima from our Gdańsk roastery is a medium-roast bean — ideal for a wide range of brewing methods. Here’s what we recommend:

  • V60 / drip – highlights the apple-like brightness and clean cup,

  • French press – gives a fuller body and brings out the caramel richness,

  • Moka pot (stovetop espresso) – perfect when you want a bold, smooth brew,

  • Espresso – a well-balanced shot with a velvety crema (great with milk too).

Barista tip: Grind just before brewing and adjust the grind size to your method.
For V60 – go medium, for espresso – fine.
And always use water at 92–94°C (197–201°F) for best results.
